Colby cheese had its beginnings in Vermont around 1824.  Alfred Crowley started a factory that would go on to make the cheese for more than 170 years.

The question (& answer) were taken from p. 212 of The Food Chronology by James Trager.  The book was published in 1995 by Henry Holt.
